I have to admit, lately I’ve been all about desserts or treats I can whip up quickly. It’s not necessarily about laziness, but more so about lack of time, energy, and keeping my kitchen clean. I even made a box cake a few days ago (and it surprisingly was pretty good). This recipe is nice because it can be quick and easy using store bought ingredients, or can become a relaxing day in the kitchen if all ingredients are homemade. I decided for a compromise – store bought pudding mix and homemade whipped cream. It turned out delicious and has limited prep time, proving that sometimes “cheating” in the kitchen is okay.
– 1 stick butter
– 1 c flour
– 1 c chopped pecans
– 8 oz cream cheese
– 1 c powdered sugar
– 1 c + tub of cool whip (or homemade: 2 c heavy whipping cream, 4 tbsp powdered sugar)
– 1 small box instant chocolate pudding
– 1 small box instant vanilla pudding
– 2 c milk
Combine butter, chopped pecans, and flour. Spread mixture in 9″x13″ pan and bake at 350 degrees for 20 minutes. Cool.
Mix cream cheese, powdered sugar, and cool whip until well combined, and spread on top.
Combine both puddings with milk and spread as next layer. Finish with remaining whipped cream and top with shaved chocolate.
