Poached Egg & Avocado Toast

I’ve never been a huge fan of eggs – but combine it with bread, bacon, and avocado, and it’s something I can totally get behind. This recipe is so delicious and full of flavor that I could barely taste the egg. I simply combined a few of the things I loved and topped it off with a poached egg (a healthy alternative), and it’s now become my new go-to afternoon lunch. It’s filling enough to hold me over for the rest of the day without feeling too heavy.

Ingredients (serves 1)

1 slice whole wheat toast

1/2 avocado, sliced

2 strips turkey bacon

2 eggs, poached

Toast bread as desired. Layer bacon on bottom of toast, and then placed sliced avocado.

For poached eggs: Heat water, salt, and splash of white vinegar in a small saucepan. Just before it is about to boil, quickly stir in a circular motion to create a “vortex” in the middle of the pan. Place egg and yolk right in the middle of the vortex (placing the egg in the middle of the swirling motion keeps the egg from breaking apart). Remove from heat, cover, and let cook for 5 minutes.

Carefully remove egg from saucepan and place on top of toast. Enjoy!
