Oatmeal Bites

DSC_7740One of my biggest challenges is actually making time to have breakfast in the morning. I usually end up just grabbing coffee and skipping out on food, mostly because I’m running too late in the morning to fix something at home. I was in the store the other day looking for healthy options for breakfast, when I thought of picking up some oatmeal. I quickly realized that while this sounded like a good idea, I would never actually take the time to eat it. That’s when I looked online and saw this recipe for oatmeal muffins. They are perfect sized and nutritious, and at under 200 calories each, I don’t feel bad about grabbing one of these on my way out the door to have with my coffee.

Ingredients (makes 12)

1/8 c canola oil

1 egg

1/2 c packed brown sugar

3/4 c milk

1 tsp vanilla extract

1/4 tsp salt

1 tsp baking powder

1/2 tbsp ground cinnamon

1 1/2 c old fashioned rolled oats

toppings of choice (fruit, nuts, chocolate chips, etc)

Recipe

Preheat oven to 350 degrees F. Whisk together oil, egg, and brown sugar until sugar has dissolved. Add in milk, vanilla extract, salt, and cinnamon until well combined. Stir in oats and baking powder.

Line a muffin tray with paper or foil liners. Pour 1/4 c mixture into each cup. Top with toppings, push into mixture slightly.

Bake for 30 minutes, allow to cool for a few minutes before removing from tray.
