Homemade Cheese Ravioli

 

Ever since I got my pasta attachments for my kitchen aid a couple months back, I haven’t wanted to have any pasta that wasn’t homemade. One of my favorite pasta dishes has always been cheese ravioli, so I decided it was time I gave making it from scratch a try. It was surprisingly easy, and the result was incredibly rewarding. This recipe is simple, and can be placed into wonton wrappers if homemade pasta isn’t an option (or for a quicker result). Either way, it’s a tasty dish, and is great topped off with a meat sauce.

Ingredients

3/4 c part-skim ricotta cheese

1/4 c grated mozzarella cheese

2 tbsp grated parmesan cheese

1 egg

1/4 c fresh basil, plus extra for garnish

1 garlic clove, finely chopped

1/8 tsp ground nutmeg

1 tsp sea salt

ground black pepper

(24 wonton wrappers – if not using homemade noodles)

Recipe

Mis all ingredients together. If using kitchen aid mixer, follow instructions via the manual. If using wonton wrappers, place tablespoon of mix inside wrapper, wet edges, and pinch together.

Cook for about 2 minutes in boiling water. Top with fresh basil and serve.
