Cinnamon Apple Rings

In all fairness, you were warned. I’ve been on a little (okay, huge) apple bender since I went apple picking last weekend and came home with a bucketload of apples. After making two apple pies in the last week, I was ready to try something new. I found a recipe for these cinnamon sugar covered apple rings, and knew I’d hit the jackpot. The final result is a cross between an apple and a donut, and it is amazing. If you ever have a bunch of apples to use in a short amount of time, I highly suggest getting out your frying oil and sugar to whip up these puppies. You won’t regret it.

Ingredients

oil for frying

4 apples (gala are recommended)

1 c flour

1/4 c baking powder

2 tbsp sugar

1/4 tsp salt

1/8 tsp cinnamon

1 egg, beaten

1 c buttermilk

For cinnamon sugar coating:

1/3 c sugar

2 tsp cinnamon

Recipe

In a bowl, combine flour, baking powder, sugar, salt, and cinnamon. In a separate bowl, mix together egg and buttermilk. In a third bowl, mix sugar and cinnamon for topping. Set that one aside for later.

Slice apples into 1/4″ thick slices, and use graduated circle biscuit cutters to make the rings. Throw out the pieces that have the skin and the core (you’ll get 2-3 rings from each apple slice).

Heat the oil in the pan to 350 degrees F. Mix together bowls one and two of the ingredients to make your batter. Dip the apple rings into the batter (do it gently, they will break easily), and then place into the pan. Fry each side until a nice, crisp golden brown.

Remove from oil and place on a paper towel to dry for a few moments. Coat in cinnamon sugar topping, and serve warm.
