Chinese Chicken + Broccoli

Confession: I love Chinese takeout food. When I was little, it was a dream of mine to move to New York and just order Chinese takeout every day (little did I know you could actually order Chinese delivery in every city). Regardless, the obsession stuck. The only downside of ordering out is that it’s really not all that healthy for you, and sometimes ends up being way too greasy and salty. I saw this recipe on Pinterest, and decided a homemade, healthier version is just what I needed. I couldn’t be happier with how it tastes – the fresh steamed broccoli and home-cooked chicken makes all the difference.

Ingredients

2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 large head of broccoli, crowns only, cut into bite-sized pieces

1 tablespoon vegetable oil

Marinade:

2 tablespoons vegetable oil

1 tablespoon water

1/2 teaspoon baking soda

1 teaspoon sugar

2 teaspoons cornstarch

1 tablespoon reduced-sodium soy sauce

Sauce:

1/4 cup + 1 tablespoon reduced-sodium soy sauce

2 tablespoons brown sugar

4 cloves garlic, minced

2 tablespoons flour

1 tablespoon rice vinegar

1 tablespoon vegetable oil

2 tablespoons water

Sesame seeds (optional)

Recipe

Cut chicken into bite size pieces. Mix marinade sauce together in bowl. Add chicken, let marinate.

Steam broccoli for three minutes, set aside. Whisk together ingredients for sauce.

Add vegetable oil to a saucepan or wok on medium-high heat. Add chicken, marinade, and half of the sauce. Cook until chicken is golden brown, stirring constantly. Mix in broccoli and remainder of sauce. Cook another couple of minutes. Add water if sauce is too thick. Sprinkle with sesame seeds if desired, serve with rice.
