Memorial Weekend Eats

The unofficial start to summer is here! This weekend marks the beginning of long days, grilling out, and hanging by the pool. Whether you’re having a refined dinner party on your patio, or kicking it at the beach, here are a few of my favorite snacks I’ve made in the past, perfect to whip up for whatever entertaining you may be doing this weekend. 

Chinese Chicken + Broccoli

Confession: I love Chinese takeout food. When I was little, it was a dream of mine to move to New York and just order Chinese takeout every day (little did I know you could actually order Chinese delivery in every city). Regardless, the obsession stuck. The only downside of ordering out is that it’s really not all that healthy for you, and sometimes ends up being way too greasy and salty. Spinach + Artichoke Pizza

It’s no secret how much I love pizza. When I made my first homemade one about a year ago, I became officially hooked. In an effort to eat less pizza and pasta, I’ve been avoiding whipping them up. At least until I saw this recipe online. I somehow convinced myself that because there was green on it, it was ‘healthy’. Regardless of how good or bad it was for me, this pizza is one of the most indulgent I’ve ever had, and these toppings will definitely be incorporated more into my pizza rotation.

Quick Bruschetta with Balsamic Glaze

Other than a cheese plate, one of my favorite snacks to throw together is a basic bruschetta with fresh tomatoes, basil, and mozzarella. It’s a perfect quick and easy recipe that you can serve if you need to throw something together for a dinner party. I particularly love severing this in the warmer months – sometimes I’ll consider it my main course. It only takes about 10 minutes of prep time, and then you have a ready to go snack that looks a lot fancier than it really is!

Strawberry Glazed Buttermilk Donuts

Margherita Grilled Cheese

We had warm enough temperatures this past weekend that it no longer felt like winter. I wanted to make something for dinner that would make me feel like I needed to be warmed up from a winter chill (despite the 70 degree weather). I knew I wanted tomato soup, but decided to get adventurous with the pairing. That’s when I found this recipe for Margherita grilled cheeses – it’s like eating a pizza in a sandwich.
